Vacation prep and chicken parmesan

With my departure to Oregon merely days away, I’ve been prepping the hubs and the pups for my absence. For Joe is mainly been food related… meal plans, grocery shopping and accepting the fact that he’ll make mainly hot dogs and mac and cheese regardless of the healthier options that I’ve put in Tupperware for him to cook. I know that I will most likely come back to wilted lettuce in the crisper. For Red it’s been the privilege of sleeping on the bed and extra long sniffing whilst on potty adventures and a few new toys. At this point your probably thinking, she must be going away for weeks! Wrong… 4.5 days! But I worry about my guys!

My plan was to make meals big enough Mon-Wed this week to have leftovers so I could do laundry and clean the heck out of this entire apartment… that didn’t happen. Especially last night. I made baked chicken parmesan and Joe had seconds, then thirds!

Baked Chicken Parmesan
Servings: 4
Ingredients:
2 large chicken breasts – cut in half
3/4 c seasoned bread crumbs (I added some panko)
1/4 c parmesan cheese
3 tbs melted butter
1 c marinara (I used less than this)
Coconut oil (Or cooking spray)

Preheat oven to 450*
Coat baking sheet with oil
Combine bread crumbs and parmesan cheese on a plate or bowl
Melt butter in separate bowl
Coat chicken with butter – dip chicken in breadcrumb mixture

Line chicken on cooking sheet – add a little more oil to prevent sticking
Bake chicken in oven for 20 mintues – flip and cook for another 5 minutes
Remove  from oven and spoon marinara over chicken – sprinkle cheese over the top
Cook for another 5 minutes or until cheese is melted
Serve over pasta or with a salad
