Better Breakfast Ideas

I mentioned on my FB page earlier about a conversation I overheard at school this morning:

The mere fact that people reference the term “you are what you eat…” then think that eating one apple, an iceberg lettuce salad, consume three-times the daily amount of whole wheat bread because it’s “healthier” than white bread doesn’t really add up.
Every meal should contain fruits and a lot of vegetables.
The majority of people think of breakfast (especially on weekdays) as bread/wheat products and dairy.
Cereal and milk – oatmeal with various toppings – bagels and cream cheese – toast with butter – etc.
Our bodies burn through the sugar quickly and the dairy can actually cause adverse affects making us sluggish and tired.

A couple ideas from my naturopathic doctor in Oregon… including cookies:

Hash is the best breakfast in my eyes:

Prep the night before  & microwave/steam the sweet potato in the AM:

This should help give more options and realize that coffee and toast aren’t the only quick morning meals.

Organic produce and I’m alive

… barely.
Midterms are over for my most stressful class and I’m breathing easier.
I’m actually on Spring Break right now which feels great, but I still have 3 more midterms to study for.
My life doesn’t quite look like I projected here but it’s pretty close.

I mentioned on my FB page that my saving grace with eating healthy during the stressful times has been Farm Fresh To You.
Every other Wednesday they bring me a gigantic box of fruits and vegetables.

There have been some things (cauliflower & fennel) that I was uncomfortable using, but I can proudly say, I’ve given everything a chance.
The strawberries are also some of the best I’ve ever had!
I get the “more” mixed box but there are quite a few options. Only fruit, only veggies, “monster” mixed, snack box, etc…

Disney and New Favorites

Yesterday - two things of significance happened.

1 – I ran out of morning rounds (which I’m completely obsessed with)…
They’re super delicious. I like them after a workout too with some peanut butter. mm-mm.

2 – The BF and I went to California Adventure!

I downloaded the “DL Maps” app on my phone and with wait times looking like this:

I knew we needed to go.

The BF hadn’t been to Disneyland since he was really young and CA Adventure is a completely new realm.
So, I bought myself a season pass and Joe a 3-day park hopper for Christmas this year.
Last night we found out we were able to transfer the amount spent on a park hopper for an annual pass!
Super excited about that.

As far as the rides go… I was slightly disappointed at the little mermaid ride.
It seems a little bare in spots and hopefully they fix that.
Like always I cheesed it up on the Roller Coaster…

I LOVED Toy Story Mania and Radiator Springs Racers.
I would’ve cheesed it for the camera but I didn’t know where the camera was.

We’re going back on Sunday too – first time braving the crowds.
The longest line we stood in last night was about 25 minutes in Cars Land.
All together we got 6 rides in between 5:45 – 8 pm. That’s unheard of on a busy day.

I’ve heard that Tuesday is the best day to go but Monday last week at Disneyland was dead and last night was a ghost town too.
So, I’m pretty sure it’s anytime it’s cold/raining and a weeknight.
I guess growing up in Oregon has it’s perks because it didn’t bother us one bit.

Life… Now Acelerated

Today marks the start of a LONG five months ahead.

For some crazy reason, I decided that 11 units would be a good idea.
So 40+ work hours a week plus a full load of school = end of what little social life I have.
On top of work and school – we also need to start getting ready to move.
Or at least the OCD side of me is ready due to our lease being up in April.

My main goal in these next few months is to not fall off the bandwagon with my eating/exercise.
I’m not a stress eater but when I’m exhausted and don’t feel like cooking… sometimes In-n-Out seems like my only option.
Not this time!

I would prefer sweet tomatoes over fast food anytime though.
My dream would to be able to afford the Whole Foods salad bar a couple times a week.
The best solution to this will be making up a meal plan once again and buying fruits and veggies in bulk at Costco.

Orange County 5k Electric Run Review

This race happened two months ago… but like my last post I seem to be sticking with the time frame.

I wasn’t going to ever do a recap of this race. Mainly because I was super disgruntled about the whole event.
A couple months prior to the race I created a team and rallied a few friends to join in on the fun, but everyone bailed.
So the couple days leading up to the event, I kept second guessing if I even wanted to go.
And while I AM very codependent, everything about this race screamed teams and “fun running”.
The other reason was that few days before the race, I got an email that said parking is $10. um.. what?
On top of the race fee which was $65. Plus gas. Traffic on the 405… ugh.
Anyways, I stopped complaining got dressed in this little getup…

… and took off for Costa Mesa.
When I got there I was able to snag parking on the street and jogged my way into the OC Fairgrounds.
Take that you greedy jerks.
The bib pickup was a mess and little did I know, the race wasn’t timed and the numbers “didn’t matter.”

After picking up my schwag bag I headed towards the starting line around 6:30.
Race was set to start at 7 and I was in the first group of runners near the starting line.

Eventually the gaps were filled and I felt like I was at a rave.
People all around me smelled like booze and I then realized, I was one of very few single racers.
Around 7:05 I started looking around as to what the hold up could be and realized that there was a twitter message put up earlier in the day about Carmen Electra coming to MC the event.
… Cool? Uh, Maybe in the 90′s.
A mom next to me asked what time it was, (since I was smart and brought my phone) and I relayed the message about Carmen Electra most likely being late.
Her daughter looks up and her and says, “who’s Carmen Electra??”
Her mom and I laughed and I said, “I’m actually really glad she has no idea who she is…”
Sure enough… 7:20 rolls around and she’s being loaded up into a cherry picker, which goes up and down 15 times with her entire entourage in it.
7:30 – the race finally takes off and I’m road killing everyone.

At first the course is flat with a few puddles and we”re running through spots of loud speakers blaring in your ear and some flashy lights.
Things took a bad turn when people went splashing through big puddles since it had rained heavily during the day..
Then there was this awkward spot of wet sand and gravel that irritated me. Especially since it wasn’t well lit.

The picture of the finish line is horrible so I’ll spare you but it was terrifying.
It was like an airplane hanger with a cement floor. There was strobe lights and the floor was saturated with water.
I almost slipped and fell more than once. But I was so glad to be done.
I was probably within the first 100 people to finish so the “after party” was pretty dead.
BUT…

I did get within 10 feet of Carmen Electra. So, that’s neat.

Overall, I’d give the race 2.75 out of 5.
I probably wouldn’t be so bitter if I would’ve had people to run with.
This whole thing seemed to be in the infantile stages, so maybe I’ll try again.
Or not and do the color run… we’ll see.

Juicing… just cause’

Two Months.
Two whole months since I’ve felt like posting.
Things got so crazy-busy with school/holiday/work messes that I couldn’t even stay up past 9pm.

For my two week Christmas/New Years vacation I spent most of my time in my pajamas.
(It was glorious!)
I did start feeling more and more like myself after a couple days of sleeping in and relaxing.
Because of that, I decided to do a three day juice cleanse, which has turned into me replacing one meal a day with a juice.
It’s usually a green juice made with kale, cucumber, green apples, ginger and celery.
However, when I first started the cleanse, my cravings for sugar skyrocketed.
So, my suggestion for anyone that’s interested in doing a cleanse is to take that into account and make what I call “rainbow” juice.

Rainbow Juice:

(All Organic)
1/2 Cucumber
1 Persimmon
6 Celery Stalks
1″ piece of Ginger

Pinch of cilantro
Pinch of parsley
3 Carrots
1 sm Apple
1/2 Lemon
1 sm Beet
(Optional 1/4 tsp of Maca Powder)

End Result…

Heads up… when you make anything with beets – the second you put it into a glass, it turns red/purple.
It’s only pretty right out of the spout!

Best of the rest.

I got pretty dang sick a few weeks ago and it really took me out of the game.
It started Friday afternoon and lasted through the following Friday.
Didn’t feel like myself at all – and actually took a day off to recoup.

Other than being sick lately I’ve….

hopped on my bike for a couple miles at a time..

And it’s thanks to my wonderful Aunt & Uncle that I have a bike to ride!
They GAVE me this bike a couple weeks ago and I love it.
I seriously have the best family.

….been out to visit my parents in the desert and had an amazing experience feeding a male giraffe.

My phone died while we were there.
Huge thanks to my wonderful friend Heather, for most of the pictures!

… Started classes again!
Been working really hard on my notes!

Learned all about female sexuality in chapter 3!
Felt like 5th grade sex-ed class all over again!

… worked really damn hard on a meal plan.


(Except for the 2 cookies I had last night)

… Thought of getting into extreeme coponing but then realized it doesn’t fit in with our lifestyle.
So, I clip the coupons for things at Whole Foods and will continue to spend $50 on 8 things.
Kidding… kind of.
But be leery of their parking lot.

Fog & Smog even have a song about it…

They are amazing.

… and last but not least….

Spent a lot of time with this guy. <3
